  1. Bring the water and a half cup of the milk and salt to a boil in a small pan.
  2. Place a medium saucepan over medium heat. Add the butter and when it's melted add the oats. Stir for a few minutes or until the oats smell slightly toasty.
  3. Add the boiling water/milk to the oats pot and reduce heat to maintain a simmer for 25 minutes, without stirring.
  4. Add the remaining milk gently stir into the oatmeal and cook for an additional 10 minutes. Spoon into a serving bowl.
  5. Add toppings if desired.

Sweet Potato Pie
There are many different sweet potato pie recipes around. All are good, some are heavier than others. This recipe makes a light-textured pie, not too sweet with a nice spice(fresh ginger) flavor.   1. Preheat oven to 350F. Pierce sweet potatoes with a fork several times. Place on foil-lined baking sheet. Bake for 60 minutes or until very tender.
  2. Cool, peel and puree in a stand mixer with whisk attachment . Add eggs & yokes to bowl whisk until combined. Add sugar, salt, cinnamon, ginger, nutmeg, vanilla and evaporated milk whisk until smooth.
  3. Pour mixture into prepared pie crust, bake for 1 hour until crush is baked and filling is set.
  4. Remove from oven and let cool completely until the middle is firmly set. Refrigerate until ready to serve. Can serve warm, the fridge for a adds few hours creates a denser, creamier texture.

Tennessee Bread Pudding
Bread pudding is the ultimate classic comfort food. It’s like a custard with much more texture. This bread pudding is water based vs milk & heavy cream. It’s not over-the-top or as rich but it’s still pretty good.

  1. Preheat oven to 350F degrees.
  2. Combine water and sugar in a large bowl, until sugar dissolves. Beat in milk and eggs with a whisk until blended.
  3. Stir in raisins, butter, vanilla, cinnamon and nutmeg.
  4. Add bread to bowl and let it stand for 30 minutes. Pushing down occasionally.
  5. Pour mixture into a lightly buttered 9-by 13-inch pan. Bake for 45 minutes. Take a toothpick and insert into middle of pudding. It should come out clean indicating it’s done.
  6. Cool slightly and serve.

If you like coconut or pineapple add 1/2 cup to 1 cup with raisins. 

Carnitas

Carnitas
Confit is a French cooking technique. It means to cook in ones own fat. Carnitas is pork(usually shoulder) gently simmer for hours, in lard. It results in a rich, crispy, tender moist dish.

Tomatillo Verde
Instructions
  1. Preheat over to 350F
  2. Place a large Dutch oven, over high heat. Add lard, brown pork on all sides. Will take 3-5 minutes per/side.
  3. Once all browned, all salt, pepper, cumin, bay leaves and cinnamon sticks to pot. Add milk and enough water to cover the pork pieces.
  4. Place foil over top cover tightly and add lid(if you have one). Cook for 2-2.5 hours until porks tender.
  5. Remove from oven.
  6. To finish, break/city the meat into into largish(3-4inches)pieces.
  7. To crisp, turn over to 450F. Remove foil/top from pot. Place in hot over for 35-45 minutes. Until all the liquid is gone and the meats crisp. Remove from oven, serve.
Tomatillo Verde
  1. Remove tomatillos huskys and wash with cold water.
  2. Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 10 minutes. Remove tomatillos with a slotted spoon.
  3. Place tomatillos in blender with other ingredients and pulse until well mixed.
Recipe Notes

Mexican coke can be substituted for part of  the milk. The results are similar, maybe a little sweeter. Unfortunately the high sugar content in the soda makes cleanup a project.
